16 P 4-501.114 (C): (C) A chemical SANITIZER used in a SANITIZING solution for a manual or mechanical operation at contact times specified under ¶4-703.11(C) shall meet the criteria specified under §7-204.11 Sanitizers, Criteria, shall be used in accordance with the EPA- registered label use instructions, and shall be used as follows: (C) A quaternary ammonium compound solution shall: (1) Have a minimum temperature of 24°C (75°F), (2) Have a concentration as specified under § 7-204.11 and as indicated by the manufacturer's use directions included in the labeling, and (3) Be used only in water with 500 MG/L hardness or less or in water having a hardness no greater than specified by the EPA-registered label use instructions.
The concentration of the quat sanitizer at the 3-compartment sink was too low. Repair the chemical dispensing system to dispense sanitizer at 200-400 ppm. Follow up will occur 1-2-25. An alternative timeline for correction was completed. - (Correct By: Jan 2, 2025)
38 C 6-501.111 (A) (B) (D): The PREMISES shall be maintained free of insects, rodents, and other pests. The presence of insects, rodents, and other pests shall be controlled to eliminate their presence on the PREMISES by: (A) Routinely inspecting incoming shipments of FOOD and supplies; (B) Routinely inspecting the PREMISES for evidence of pests; (D) Eliminating harborage conditions.
Observed mouse droppings below the shelves in the dry storage room. Clean these droppings, continue to work with your pest control provider to eliminate these pests, and maintain by the next routine inspection. Repeat
41 C 3-304.14 (B)(1)(2): (B) Cloths in-use for wiping counters and other EQUIPMENT surfaces shall be: (1) Held between uses in a chemical sanitizer solution at a concentration specified under § 4-501.114; and (2) Laundered daily as specified under ¶ 4-802.11(D).
The concentration of the quat sanitizer in red buckets throughout the kitchen was too low. Sanitizer solution was mixed by hand to 200-400 ppm. COS
49 C 4-602.13: NonFOOD-CONTACT SURFACES of EQUIPMENT shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
The following non-food contact surfaces are in need of cleaning: 1)The interior of the trustee side microwave, 2)The interior and exterior of the trustee side cooler and warmer. Clean and maintain by the next routine inspection.
51 C 5-205.15 (B): A PLUMBING SYSTEM shall be(B) Maintained in good repair.
The hand washing sink on the cooler and warmer side of the trustee kitchen is not working. Repair and maintain by the next routine inspection. Repeat
55 C 6-501.16: After use, mops shall be placed in a position that allows them to air-dry without soiling walls, EQUIPMENT, or supplies.
The mops were stored inside the mop sink and mop bucket. Store all mops in a fashion that allows them air dry and maintain by the next routine inspection.
55 C 6-501.11: PHYSICAL FACILITIES shall be maintained in good repair.
The base tiles near the door in the walk-in cooler have been replaced, but still need to be properly grouted. Finish these repairs and maintain by the next routine inspection. Repeat
